There is no reason to not enjoy great tasting (and sometimes sinful food).  But did you know that you can do without by switching some ingredients around?  No one will ever know!


Taco Soup


***it makes a lot!!!
(warm up & eat healthy with high fiber and vitamins this winter season)

Ingredients:
1 large can whole or crushed tomatoes (you can put in blender & chunk up)
2 small cans of kidney beans (or 4-5 cups cooked if you make your own)
1 small can olives
1 small can green chilies (optional)
1-2 small can(s) tomato sauce (depending on how much soup you want)
1 lb meat (lean beaf, chicken, tofu, etc.)
1 bag frozen corn
1 small can chick peas or garbanzo beans (or 2-3 cups cooked)
1 package taco seasoning (mix as directed & cook in with the meat)

Garnish:
Corn chips
Cheese (not a lot!!!)
Non fat sour cream (optional)
Cook your meat, then add the taco seasoning as directed on the package.  Then add everything into a large pot and get warm.  You can put anything you want into this soup.
